Turmeric Egg Salad with Avocado and Olive Oil instead of mayonnaise
When we were kids My mom used to make us an egg salad but she always replaced the mayo with ripe avocado. Which is just a s creamy yet much, much healthier and so delicious.
For 2 people
- 2-3 hardboiled egg
- 1 ripe avocado
- Olive oil
- Organic turmeric
- Celtic salt
- White or black pepper.
- Mix all the ingredients together, salt and pepper to taste
- Served with fresh tomatoes onion, lettuce etc…
