Cardamom Scented Sweet Potatoes and Carrot Medley

Another “Easy Breezy Lemon Squeezy” and super healthy recipe!

Ingredients:

  • Sweet potatoes

  • Few carrots

  • Olive oil

  • Salt & Pepper to taste

  • 1-2 tea spoons of ground Cardamom (can be substitute with nutmeg only if you can’t find Cardamom)

  • Few fresh sprigs of Thyme leaves (dry Thyme can work as well) Thyme health benefits

Steps:

  1. Slice the potatoes and carrots to size of choice

  2. Mix spices and olive oil till all vegetables are covered

  3. Bake on 400 F for 20-40 minutes till soft.
