Cardamom Scented Sweet Potatoes and Carrot Medley
Another “Easy Breezy Lemon Squeezy” and super healthy recipe!
Ingredients:
- Sweet potatoes 
- Few carrots 
- Olive oil 
- Salt & Pepper to taste 
- 1-2 tea spoons of ground Cardamom (can be substitute with nutmeg only if you can’t find Cardamom)

- Few fresh sprigs of Thyme leaves (dry Thyme can work as well) Thyme health benefits 
Steps:
- Slice the potatoes and carrots to size of choice 
- Mix spices and olive oil till all vegetables are covered 
- Bake on 400 F for 20-40 minutes till soft.
